- Soy Sauce
- Korean Rice Syrup
- Toasted Sesame Oil
- Garlic
- Ginger
- Red Chili Peppers
- Korean Chili Paste
- Korean Chili Powder
Amazingly, that’s only for the fantastic sauce. Along with chicken thighs, you’ll finish the dish with scallions, mozzarella cheese, and more toasted sesame seeds. So follow these directions to make this specific recipe.
Directions – Making the Sauce
You’ll first make the sauce. Whisk 1/2 cup of chicken broth, 1/2 cup of soy sauce, 1/4 cup of rice syrup, and 1/4 cup of Korean chili powder and Korean chili paste in a bowl. Then add two tablespoons of sesame oil. Set the bowl aside.
Heat two tablespoons of vegetable oil in a medium-sized saucepan over medium-high heat. As soon as it simmers, add eight large minced cloves of garlic and a tablespoon of freshly grated ginger. Cook the ingredients for a minute. However, be sure to stir them constantly.
Then add two red chili peppers after stemming them and removing the seeds, along with a tablespoon of black pepper. For this part, you’ll only cook the ingredients for about 30 seconds. At that point, transfer the ingredients from the bowl into the saucepan. Next, add a cup of Sprite.
Cook this for roughly seven minutes. Moreover, stir it occasionally while scraping the sides of the saucepan. When done, pour the sauce into a heat-proof measuring cup or bowl. Set that aside and allow it to cool.

Directions – Cooking the Chicken
As for the chicken thighs, you’ll need to wash them, followed by patting them dry. With a sharp knife, carefully slice them lengthwise on both sides of the bone. When finished, place the knife underneath the bone to remove it. In addition, cut off any cartilage or bone fragments left behind.
Place the chicken in a large plastic zippered bag along with half of the cooled sauce. Put it in the refrigerator for a minimum of 45 minutes to marinate. However, you can store it in the refrigerator overnight.
When you’re ready to cook the chicken, you have two options. First, you can place the thighs on a broiler rack. Then broil them about six inches from the heating element on high heat. Second, you can grill the chicken outside. Regardless, use the remaining sauce to baste the thighs and the other half for dipping when the chicken’s done.
Just before serving, sprinkle the cooked chicken thighs with six ounces of mozzarella cheese. Again, place the chicken under the broiler until it melts. Usually, that takes one to two minutes. After pulling the thighs out of the oven, sprinkle them with two diced scallions and one tablespoon of toasted sesame seeds.
